No Bake Energy Bites

Must. Have. Chocolate. This is pretty much the thought process in my head after every meal (anyone else feel my pain?) However, if you follow me on Instagram, you’ve probably noticed I actually try to live a pretty healthy lifestyle. I work a job that requires me to eat out daily – I know, I know, poor me. But, this means I need to be super health conscious about my choices. I’m a big snacker, so I’m always looking for things that taste good and satisfy my sweet tooth without being completely useless from a nutrition standpoint. That’s where the energy bites come into play, I did the math on these bad boys, and they’re about a 100 calories a piece, and a healthy combination of protein (about 5 grams), carbs, fats and they seriously taste amazing! I wouldn’t eat more than two per day, but they’re just sweet enough to ward off the chocolate devil on my shoulder. 

Ingredients: 
1 cup rolled oats
1/2 cup of nut butter, I use peanut butter
1/3 cup of honey 
1/4 cup of almond meal
1/4 cup slivered almonds
1 tablespoon of chia seeds
1 tablespoon of flax seed
1 tablespoon of coconut oil, melted
1 scoop of vanilla whey protein powder
1/2 cup chocolate chips


Instructions:
In a large bowl, mix rolled oats, almond meal, protein powder, almonds, chia seeds, and flax seed together. In the same bowl, add in peanut butter, honey, coconut oil and chocolate chips. Mix all ingredients together until you get a thick sticky/doughy substance. Put the mixed ingredients in the fridge for 30-45 minutes to allow mixture to harden (this helps when shaping them into a ball). Take them out of the refrigerator, roll teaspoon sized balls, and you’re all set!


This makes about 20-25 balls, and only takes about 15-20 minutes of prep time. Enjoy!!
